(More customer reviews)I purchased this item based on a review at cooksillustrated-dot-com (search for keyword "retrogradation" if you want to know more). Cooksillustrated thought this product was the best of the lot they tested and said it'd keep homemade bread crusts crisp and the loaf fresh for up to three days. The claim that crusts would stay crisp especially interested me.
The bag doesn't work miracles and disappointingly, doesn't keep crusts crisp. Compared to leaving my homemade or store-bought artisanal bread in a leaky plastic box, there was a small but definite improvement in quality on day one after baking/purchasing, but the crusts are definitely not crisp. By day three (just as the cooks illustrated article says) you need to freeze the bread and reheat it.
It's somewhat hard to clean b/c there are all sorts of folds in which crumbs can be trapped. You're supposed to be able to put it in the washing machine or dishwasher. Mine survived the washing machine (in a lingerie bag), but the moisture trapped between the plastic bag and the cloth bag is hard to get rid of (hair dryer time).
If your family is like mine, polishing off your homemade bread within a day or two of baking, this bag will help maintain freshness. I give it 3.5 stars for performance (on day one after baking, 4 stars for freshness, but 0 on the crisp crust promise) and 2 stars for being wildly overpriced (see my image in the customer image gallery).
